Fresh Chunky Guacamole

1/8 cup red onion, finely diced
1/4 cup cilantro leaves, chopped
1 lg clove garlic, mince then ground into a paste w/ salt
2 avocados, pitted and peeled
juice from 1-2 limes
1 roma tomato, diced
kosher salt and freshly cracked black pepper
Add first 4 ingredients into a mixing bowl. Using a potato masher or your hands, mash up the avocado leaving some larger chunks. Add tomatoes and juice from one lime. Season with kosher salt and freshly cracked black pepper. Stir guacamole to combine ingredients thoroughly. Taste then adjust seasonings as necessary with salt, pepper, and more lime juice. Serve immediately with corn tortilla chips or place plastic wrap directly on the surface of the guacamole to prevent oxidization (browning) and refrigerate until ready to eat. Enjoy!
